On the weapon side, a reliable rifle, a strong automatic, and a few throwables go further than a huge closet full of niche guns. The Service Carbine is easy to justify if it is discounted.

How do I keep making money without burning out?

This is where a lot of players get it wrong. They try to do everything, every night, and then wonder why GTA feels like a second job. Better to run short loops. Do a few high-paying missions, sell cargo when the session feels safe, and leave room for random stuff like daily objectives or a quick robbery if the mood is there. Invite-only lobbies are fine for clean business work. Public lobbies are better when you want the extra risk and do not mind some nonsense.
